Flower – Power Eggs

Ingredient’s:
• 2 Medium sized eggs (88g)
• 100g Smoked salmon
• 1/2 Red pepper
• 50g Asparagus tips
• 5 Cherry tomatoes
• Small helping of spinach and watercress.
Method:
- Prepare a bed of spinach and watercress onto your plate and top with your rolled up salmon portions.
- Slice your pepper into 2 rings around 1.5cm thick. Pre- heat a pan with 2 tspn of olive oil over a low-medium heat.
- Place your peppers onto the pan alongside your cherry tomatoes and asparagus tips for around 5 minutes, making sure to flip your peppers half way.
- Once your peppers are softened, crack an egg inside the ring of each pepper. Season well with salt and pepper. Turn your heat down low and allow your egg to cook for around 3 minutes, leaving a runny yolk, or if you’re like me, fully cooked.
- Once cooked, top your salad with your Flower Power eggs, tomatoes and asparagus.
- Garnish with some fresh parsley.
