Tomato & Mascarpone Chicken Pasta

An intense tang complimented by creamy mascarpone. An experience you most definitely do not want to miss out on.
Ingredient’s:
-2 Chicken Breasts
-500g Penne Pasta
-1 White Onion
-Half Red & Half Green Bell Pepper
-Courgette (half)
-6 Cloves of Garlic
-Fresh Basil
-Mixed dried herbs (2tbspn)
-Cherry Tomatoes (8)
-Tomato Puree
-1 Tin chopped tomatoes
-1 Knorr Chicken Stock
-500ml Water
-4 Heaped spoons Mascarpone
-200ml Cream
-Splash of Worcestershire Sauce
Method:
-Finely dice all of your vegetables and wash then cube your chicken breasts.
-Boil your pasta with some added mixed herbs to the water. Once softened drain the water and leave your pasta to one side.
-Add 1 tblsp Olive Oil to a large pan and on a medium – high heat. Brown your chicken and vegetables, excluding your garlic.
-Add all other ingredients bar the fresh basil and pasta to the pan and simmer on a low heat for around 15 minutes.
-Add the pasta to the mix and continue to stir on a low heat for a further 2 minutes ensuring all pasta is coated in the sauce.
-Plate and top with your fresh basil. Accompany with some garlic bread. Post on your socials and tag us to let us know how you got on.
